Recipe of the Week:

Whole Wheat Biscuits


1 cup whole wheat flour, unsifted
1 cup unbleached flour
1 1 Tbsp aluminum-free baking soda
1 tsp salt
3 Tbsp soy margarine
1 cup soymilk

Preheat oven to 450 F. In large bowl sift together unbleached flour, salt, and baking powder.
Stir in whole wheat flour, Use fork and mash soy margarine inro flour mixture until mixture resembles coarse crumbs.
Add soymilk and mix with fork until flour forms dough. Knead until dough is smooth, about 30 seconds.
Use only enough flour to keep from sticking. Roll to thickness of one half inch. Use flourer biscuit cutter or glass
to cut out biscuits. Place cut out biscuits one half inch apart on ungreased baking sheet. Bake 12-15 minutes.
Makes 12 biscuits. Serve hot with favorite fruit spread.



Dallas' Taco Rolls


1 8oz package cream cheese
1 can refried beans
1 envelope taco seasoning
flour tortillas
shredded chedder cheese

Let cream cheese soften then mix first three ingredients.
Start at edge of tortilla ad spread a little more than 3/4 the way across
and down the middle. Fill with cheese (at the end of the filling, across from the starting edge).
Roll like an egg roll. Fry until golden brown. Serve with or without sour cream.



Oatmeal Patties


1 small raw potatoe grated
1 1/2 cups of oatmeal
1 teaspoon onion power
1/2 cup sauteed onion
3 tablespoon of beef like seasoning or spices of your choice
           1 lb firm tofu, mashed
1/2 cup water
1 teaspoon salt
2/4 cup mushrooms, chopped
1 teaspoon garlic powder

Mix all ingredients together and form in patties. Heat 2-3 tablespoons of oil in frying
pan and brown the patties until golden. Dry on a paper towel. Place in a casserole
until golden. Dry on a paper towel. Place in a casserole dish and cover with
a mushroon gravy (save the used juice to make gravy). Bake at 350 for 20 minutes.



Carob Balls


In a large bowl, mix well:
3 medium apples grated
1/3 cup honey
      
2 medium potatoes grated
1/3cup of soy milk

In another bowl, mix well:
1/4 cup rice flour
1/4 cup unsweetened coconut
1/4 cup carob powder
1/8 teaspoon salt
      

1 cup ground almonds
1/3cup of fructose sugar or honey
1 teaspoon Postum

Combine ingredients of both bowls and mix well. Place in an oiled baking dish
and bake at 350F for 45 minutes. Cool, then form inro balls and roll in coconut.



Whole Wheat- Carrot Banana Bread


1 cup brown sugar (packed)
1/2 cup butter
2 eggs
1/2 tsp baking powder
1 cup all-purpose flour
1/2 tsp salt
           1 cup whole wheat flour
1/2 teaspoon cinnamon
1 tsp baking soda
1/2 cup chopped nuts
1 cup mashed ripe bananas (about 3)
1 cup finely chopped carrots

Grease bottom and half way up sides of two loaf pans (71/2 by 31/2)
In a large bowl, beat butter and brown sugar until fluffy. Beat in eggs. In medium bowl stir together dry ingredients.
Add flour mixture and bananas alternately to brown sugar mixture. Stir in carrots and nuts.
Spoon into prepared pans and bake at 350 degrees for 50 to 60 minutes. Cool loaves in pans for 10 minutes.
If it starts to over brown, cover with foil. Raisins can be added.




Carob Cream Pie


1 cup almonds
1/2 cup honey
2 cups water
1/4 cup carob
           6 tablespoons cornstarch
1/2 teaspoon salt
2 teaspoons postum
2 teaspoons vanilla

Blend ingredients until smooth. Pour blended ingredients into sauce pan with 1 1/2 cups
of additional water. Bring to a boil and then reduce heat and cook until thick.
Cool slightly and pour into baked pastry shell and chill.




Potato-Pecan Patties


2 small potatoes chopped
1/2 teaspoon salt
1 tablespoon Soy Sauce
1/3 cup pecan meal
3/4 cup whole wheat flour
           1 medium onion chopped
1/4 teaspoon thyme
1 cup water
3/4 cup breadcrumbs

Blend: potatoes, onion, water and seasonings. Add all other ingredients. Mix in a large bowl.
Shape into patties and bake at 350F for 30 minues.
